Barbecue Pasta Salad

  • 12 package Valente Garlic Parsley Linguine 
  • 10 oz. package frozen corn, defrosted
  • 2 small zucchini, sliced (approximately ½ lb.) 
  • 1 green pepper, diced    
  • 1 small red onion, sliced
  • ½ tsp. salt 
  • 1 tsp. ground black pepper
  • 1 Tbsp. parsley
  • ½ cup vinegar
  • ½ cup oil
  • 2 Tbsp. barbecue sauce 

    

Cook pasta as directed on the package, rinse in cold water, drain and place in a serving bowl. Combine all other ingredients, toss with pasta, and chill for ½ hour.  Serves 4-6. 

 

Optional: serve with chicken chunks or grilled chicken
