Lemon Pepper Vinaigrette Pasta Salad

12 oz Package Lemon Pepper Linguine

½ tsp salt

½ tsp ground black pepper
1 tsp dijon style mustard
1 tbsp vinegar
3 tbsp olive oil
1 medium size lemon, squeezed  or 3 tbsp lemon juice
½ lb cubed cooked ham
½ lb cubed cheese ( cheddar, meunster or swiss)
1 lb frozen peas

Cook pasta as directed on the package, a minute before the pasta is finished add the frozen peas.  Drain pasta and rinse in cold water.

To make the vinaigrette, combine salt, pepper, mustard and vinegar in a small mixing bowl and mix well. Slowly whisk in olive oil, blend well, and add juice from the lemon.
Toss remaining ingredients with pasta and vinaigrette.

Serves 4.


*The lemon vinaigrette can be used as a dressing over a stir-fry vegetables
