Country Captain's Chicken

1 12 package Apple Fettuccine
2 pounds chicken thighs (about 4-6) 3 TBSP flour seasoned with salt and pepper
¼ cup olive oil
1medium yellow onion, sliced 1medium green pepper, seeded and sliced
1 granny smith apple, cored and sliced
1 tablespoon minced garlic
1 28-ounce can chopped tomatoes and their juices
2 tablespoons curry powder
3 tablespoons raisins
3 tablespoons slivered almonds, toasted
Heat olive oil on low medium temperature in a saucepan. Dredge chicken in flour, and brown each side in olive oil. Remove from pan, add onion and peppers and apple slices and saute, 3-5 minutes until tender. Add garlic and saute 1 minute more. Add canned tomatoes and add chicken back into sauce. Add curry powder and simmer 20 mintues. Adjust seasoning by adding more curry powder, salt and pepper. Cook pasta following package directions, approximately 4-5 minutes and drain. Place in a serving bowl. Add chicken and sauce. Garnish with raisins and
almonds. Serve hot Serves 4-6
