Spinach Linguine with Lobster and Arugula

Spinach Linguine with Lobster and Arugula
1 12 oz package of Pasta Valente Spinach Linguine
4 lobster tales in the shell or 2 cups fresh lobster meat
6 whole peppercorns or 1 tsp ground pepper
2 cups water
1 clove of garlic
1 clove of shallot
2 TBSP butter
1/2 cup white wine
1/2 cup heavy cream
1 fresh tomato, chopped into small pieces
2 cups fresh aruguala
Remove lobster tails from shell and cut meat into bite size pieces, Place shells in water with black pepper and simmer for about 10 minutes. Add additional water if liquid evaporates. Drain and set aside. In butter saute garlic and shallots, 3 minutes, add lobster and saute until pink and firm, about 5 minutes, add white wine, shell broth and cream, simmer while pasta cooks. Cook pasta in boiling water for 3-4 minutes drain. Toss pasta into simmering sauce and add fresh tomatoes, and arugula. Serve immediately. Serves 4
